Sour Soup
Recipe for Sour Soup to cook at home from the South Tyrol region. Grandmother's way, simply delicious.
Sauresuppe-Tripe - Volgger Egon
Ingredients:
- 400 g soft-cooked beef or pork stomach, tripe
- 2 onions
- 3 tbsp oil
- 2 tbsp flour
- 11/2 l water or meat broth,
- Allspice
- Salt
- Pepper
- 2 cloves of garlic
- some zest of 1 lemon
- 1 bay leaf
- some vinegar
Cut the tripe into fine strips and sauté with the finely chopped onions in oil. Dust with flour
continue roasting and then deglaze with meat broth or water. Add the spices
and let simmer slowly for 1/2 hour. Finally, season with vinegar.
